Easy Mac & Cheese Veggie Chicken Casserole
Ingredients:
4 tbsp. butter/margarine, melted and divided
1 cup 2% milk
8 ounces of dry rotini pasta, cooked and drained
2 cups diced cooked chicken
4 cups of frozen vegetables, thawed
2 1/4 cup shredded low fat cheddar cheese
1/4 cup dry breadcrumbs
1 tbsp. grated Parmesan cheese
Directions:
Preheat oven to 400 degrees. Combine 3 tbsp. of butter/margarine, milk, rotini, chicken, vegetables, and cheddar cheese in an 8 inch baking dish. Combine breadcrumbs, Parmesan cheese and the remaining butter/margarine in a small bowl; sprinkle over top of casserole. Bake until heated through and breadcrumbs are toasted, about 30 minutes.
Makes 6 servings. WW: 7 points per serving
